I am trying to keep it simple this week by making stand-by recipes. I have to make several cakes this week, so I want dinner to be easy to put together. I also have a few recipes I need to get on the blog, so I don’t want to get overwhelmed ! The Gluten Free Menu Swap is hosted this week by Cooking and UnCooking.
The ingredient of the week is coconut. I hope to see some great gluten free baking ideas using coconut flour. I have attempted using it a couple times, but have not come up with a winning recipe yet. Hopefully, my fellow gluten free bloggers have a few ideas.
My Gluten Free Menu

I’m glad you keep bombay chicken in your line up, because every time I see it, I’m reminded that I need to try it! Next week for sure. For some reason, the onions around here have not done well so it’s really put a cramp in my style.
Wow, great menu! I am going to put all the yummies in my recipe line up to try. They all sound like winners.
Thank you for sharing!
I have been baking a GF bread I adapted from Epicurious that uses a bit of coconut flour as one of the whole “grains” in it. It turns out really nicely and is our new favorite. I have it on my blog at: http://www.angelaskitchen.com/Angelas_Kitchen/Blog/Entries/2008/6/10_Entry_1.html
I missed this post somehow! Jude looks cute…we’ll have to go with you guys to the park sometime. or maybe we can take Jude one day.
