Gluten Free Menu Swap- July 28, 2008

I am trying to keep it simple this week by making stand-by recipes. I have to make several cakes this week, so I want dinner to be easy to put together. I also have a few recipes I need to get on the blog, so I don’t want to get overwhelmed ! The Gluten Free Menu Swap is hosted this week by Cooking and UnCooking.

The ingredient of the week is coconut. I hope to see some great gluten free baking ideas using coconut flour. I have attempted using it a couple times, but have not come up with a winning recipe yet. Hopefully, my fellow gluten free bloggers have a few ideas.

Monday: Black Pepper Salmon with Spinach

Tuesday: Chicken Salad Sandwiches (using this Gluten Free Bread Recipe)

Wednesday: Thai Chicken Wraps

Thursday: Spinach Tomato Quiche

Friday: Bombay Chicken with Coconut Rice

  1. I’m glad you keep bombay chicken in your line up, because every time I see it, I’m reminded that I need to try it! Next week for sure. For some reason, the onions around here have not done well so it’s really put a cramp in my style.
