Menu Plan Monday- September 10th

Here is my menu for the week.

Monday: Pizza w/Whole Foods Gluten Free Bakehouse crust

Tuesday: Chicken Broccoli Cheese Casserole

Wednesday: Spinach Mushroom Enchiladas w/ Quinoa

Thursday: Pumpkin Pancakes w/ Gluten Free Sausage (Breakfast for Dinner!)

Friday: Thai Chicken Wraps

Saturday: Leftovers

I am going to experiment with some gluten free toddler crackers and teething biscuits. Jude has been getting very picky at breakfast (grrr) and I am going to try and come up with something nutritious and toddler delicious for breakfast. We need to mix things up a bit. He is getting sick of bananas (God’s gift to parents) and more and more fruit is going out of season. I will post some of these recipes just as soon as Jude approves them.

    Good luck with finding a new breakfast! During that phase with mine, I made a lot of pumpkin waffles (prior to gluten free) with lots of whole grain.

    That is a good idea too. I have not bought a waffle iron since going gluten-free. I need to get one!

  3. Get the one that can divides the waffles up into sticks. My children LOVED those. Plus they could pack up as snacks on the go too.

  5. Hi Natalie! Bed Bath and Beyond has this stick waffle maker on super clearance (I think it cost $15). I don’t have one - but am planning on getting one soon!

  7. Oh, that picture makes me want another one NOW. I can’t wait to hear how the crackers and teething biscuits go. We’ve been at a loss for what to feed David for snacks, especially when other kids are eating crackers and cookies in the church nursery.

    We’re still doing rice cereal and some fruit for breakfast most days. Occasionally we’ll give him a gluten free pancake, muffin, biscuit, or grits if that’s what we’re having.

    What do you add to the rice cereal? Jude just stopped wanting to eat it. Maybe if I added something fun to eat like raisins he would go for it.

  12. Dan is beautiful. My son, Keagan, now rides on my back in my ergo baby carrier. I loved when he was in front and I could look down at him but he is so BIG that when I wear him in the front I get nothing done and have an aching back.

    My daughter, Keeley, loves pancakes. I make a bunch and freeze them. Then when she wants one in the mornings I just warm it up for her. She likes to help me and she usually decides what she wants with it. Our favorite mix, or I should say hers is Bob’s Red Mill Wheat-Free Biscuit Mix. It is gluten-free and the recipe for pancakes is great. You can’t tell they are gluten-free. I put in frozen bluberries, or banana, or gf/df choc. chips. Serve with maple syrup or agave nectar. Hope this helps some.

  13. Also Namaste makes a great gf/df/egg-free blueberry muffin mix. You can add egg but I don’t. You just add blueberries. I cook it for longer but they are so good. Note, they don’t freeze as well being that they are so moist.

  15. Lauren- Thanks for all the help! I will have to try freezing some of those things for Jude. I definitely need something I can just warm up in the morning for weekdays. If I post something, I will make sure to note whether it freezes well too. BTW, your kids names are just beautiful! Oh, and I use the front carrier when they are nursing non-stop as newborns (and it does hurt my back sometimes too). I am going to look into the carrier you have for when he is older and not nursing so much.

    Karen- I will post it soon! Pumpkin is delicious for the fall and translates so well to gluten-free.
