I am going to keep it real simple this week as far as the menu planning goes! I am trying out recipes for Thanksgiving, so I want to make things easy as far as dinner is concerned. Mary Frances has chosen greens as the ingredient of the week!

Greens Everyday
Selection: Choose firm leaves with no signs of decay or browning/yellowing.
Storage: Greens are best if eaten right away, but you can store them in the refrigerator for a day or two if you must. I store mine in a plastic bag with a damp paper towel.
Most of us do not eat enough greens, including me! However, I have read that they are THE most nutritionally packed food. Hmm….
Just ONE cup of leafy greens has NINE times the daily recommended amount of Vitamin K.
So they are an amazing source of Vitamin K, which is something celiacs desperately need [This is why I take alfalfa supplements]. Vitamin K regulates blood clotting, strengthens the bones reducing the risk of osteoporosis, and may even help with inflammation [think arthritis].
Greens also have a fair amount of Vitamin E, which aids cognition. So if you are suffering from “mommy brain” or getting older, stock up on those greens (Source)!
I have found that as I get older I get a craving for the greens I hated as a little kid. If you want some delicious ways to prepare greens, head over to Book of Yum or Gluten Free Cooking School. They are the Queens of Greens.
MY GLUTEN FREE MENU
Monday: Italian Sausage Spaghetti
Tuesday: Breakfast for Dinner (probably Pumpkin Pancakes)
Wednesday: Mrs. G.F.’s Coconut Chicken Fingers with Coconut Rice and some green veggie (we LOVE this recipe!)
Thursday: Black Bean Soup with Roasted Butternut Squash
Friday: Pesto Penne with Kale, Bacon, and Mushrooms
