Today is Dan’s birthday. He is a year old! We are celebrating with a homemade gluten free birthday cake at home today. (I have to beat last year’s hit, Lighter than Air Chocolate Cake, made by my sister, Caroline.) He had his very festive pirate birthday party (complete with costumes) last weekend with just the family. We had a blast dressing and speaking like pirates- all for the sake of a one year old. The silliness was way more fun for the adults I am sure.
It is Monday, again! Menu-planning time. As usual, if you are interested in hearing about a recipe, let me know in the comments. Sometimes it is hard to know which recipes you guys are interested in, so it helps!

Monday: Spicy Marinated Flank Steak with Broccoli and Rice
Tuesday: Vegetable Pesto Penne
Wednesday: Grilled Salmon served over leafy greens with Peach Cobbler for dessert
Thursday: Raspberry Chicken (did not get to make it last week)
Friday: Low Carb Burgers with Grilled Vegetables and a Fruit Salad
For lunches, I will be making the gluten free beer bread recipe, which I posted last week. I taught my sister how to make my beer bread this weekend and she was amazed at how easy it is to make gluten free bread.
GLUTEN FREE MENU SWAPPERS
Gluten Free Red Sox has her Lemony Shrimp Salad and her Chicken Tarragon mustard recipe on the menu this week. Her nectarine salsa sounds great! Nectarine/Peach salsas are one of my favorite things to eat this time of year.
Gluten Free Goodness has Moroccan Kebabs and a lovely sounding Quinoa dish on the menu this week. It is inspiring how many things Cheryl has growing in the garden!
Lilac Kitchen has a simple menu to get through a busy gluten free week. Menus like these are great for busy weeks, cleaning out the pantry, or when you are newly gluten free! Her terrine looks lovely too.
Living Free is making a creamed spinach pasta, sandwich wraps, and an eggplant pizza this week. Her menu looks great!
Asparagus Thin has a delicious menu that includes curried game hens and chinese black salmon. Her menu makes me wish I had more time to cook this week!
Wheatstate Celiac shared her menu with us and has lots of great recipe links. She is making a cobb salad and crisp-orange chicken spring rolls.
Aprovechar has a gluten-free, soy-free, egg-free, and dairy free menu! She has a recipe for Lemon Quinoa salad that sounds fabulous. I also like the sound of that slow-cooker BBQ!
Fresh Ginger has a great menu planned too. She is making potato leek soup and smoked ribs this week. Yum!
Gluten Free Cooking School has a yummy vegetarian menu. Mary Frances is making a Spinach meatball sandwich and black bean taco salad.
Last but not least, Gluten Free Gobsmacked joins us this week to give us a peek at how she plans her gluten free menu. She plans four days at a time and has tons of great ideas, including curried shrimp pineapple kebabs and Korean Short Ribs.
