Gluten Free Menu Swap- November 26th

Is anyone else feeling a tad overwhelmed with the holiday season? I am sure no one feels like cooking (or planning to cook) anything this week. I have been gone for almost a week, so I am actually eager to get back in my own gluten-free kitchen. I never eat very well when I am traveling.

The ingredient of the week is Ginger. The menu swap has finally made its way back to my blog! Email or leave a comment below if you have a menu up!

A Few Fun Facts About Ginger

Varieties: The ginger we find in stores is True Ginger or Zingiber officinale.

Selection: Ginger can be found year-round. Choose ginger that is unblemished and feels crisp. Never buy ginger that feels limp or has wrinkled skin.

Storage: Ginger will keep for a week at room temperature, a month (in plastic wrap) in the refrigerator, or for about six months (in freezer bag) in the freezer.

  • Ginger is known for easing nausea and mild stomach upset. I was desperate for relief from my nausea when I was pregnant with my first baby and my doctor told me to try ginger. I would put ginger slices in my tea with a little bit of honey. I was still sick for 22 weeks, but I am probably abnormal! Some doctors feel the risk of ginger outweigh the benefits in pregnancy, but it depends on your situation. I was terribly ill, so my doctor felt it was worth the risk. I still ended up having to take an anti-nausea medicine-yuck. [My second pregnancy was much better - thanks to good food and good sleep]
  • Ginger is believed to have anti-inflammatory properties. Some people claim that consuming ginger regularly will provide relief from arthritis (Source: WH Foods)
  • Ginger is a known immune booster.

OUR GLUTEN FREE MENUS

The Lilac Kitchen has some yummy things on the menu this week. Esther is using quinoa instead of couscous in her Moroccan style chicken. I will have to try that soon.

Ornery’s Wife at Thoughts from Miller Manor has great plans for all those turkey leftovers. She is making a turkey, broccoli, and brown rice casserole this week.

Carrie at Ginger Lemon Girl has her menu up! She also has a delicious-looking cornbread recipe to share. Carrie is hosting the menu swap next week.

Sally at Aprovechar has her menu posted. She is making an Indian curry this week with ginger.

Monday: Chicken Scaloppine

Tuesday: Bean, Rice, and Cheese Burritos

Wednesday: Fish (whatever I find at the store) and a Quinoa salad

Thursday: Spicy Shrimp Penne and Mixed Greens Salad

Friday: Beef Bourguignon

  4. Your menu sounds yummy! What do you serve with your Beef Bourguignon? Mashed Potatoes or some sort of noodle? I think we used to eat it with egg noodles but I haven’t seen those GF.

  8. It’s so fun to see the Menu Swap growing! I too am feeling a bit overwhelmed and decided to wing our suppers for the week. I’m also trying not to buy any groceries so we’ve had some odd combinations =) Probably the weirdest so far was Asian Pumpkin Soup, Vegan Creamed Spinach,and Rice Pancakes. I completely made up all the recipes and there were a couple that will never make it as far as pen and paper =)

  9. M- There have not been “sufficient” studies on ginger or so I was told. I think everything comes with a warning label when you are pregnant. I was eating ginger a lot to help with nausea, which is probably why my doc mentioned it to me. I probably wouldn’t think twice about occasionally eating ginger in food. :)

    Ornery’s Wife- Sorry about the confusion! Carrie is hosting next week and the ingredient is pomegranates.

    Tamara- I think I am going to do roasted red potatoes with it. We will see how it turns out. :)

    Carrie- I pound chicken breasts thin and cover them in gluten free flour and serve with a wine sauce. That is Chicken Scallopine (in my world)! I am still working on the sauce.

    Mary Frances- Jude got sick this week for the first time. I am afraid I am going to have to scrap some of the recipes later in the week (for him at least). I may end up winging it too!
