I am going to keep it real simple this week as far as the menu planning goes! I am trying out recipes for Thanksgiving, so I want to make things easy as far as dinner is concerned. Mary Frances has chosen greens as the ingredient of the week!

Greens Everyday
Selection: Choose firm leaves with no signs of decay or browning/yellowing.
Storage: Greens are best if eaten right away, but you can store them in the refrigerator for a day or two if you must. I store mine in a plastic bag with a damp paper towel.
Most of us do not eat enough greens, including me! However, I have read that they are THE most nutritionally packed food. Hmm….
Just ONE cup of leafy greens has NINE times the daily recommended amount of Vitamin K.
So they are an amazing source of Vitamin K, which is something celiacs desperately need [This is why I take alfalfa supplements]. Vitamin K regulates blood clotting, strengthens the bones reducing the risk of osteoporosis, and may even help with inflammation [think arthritis].
Greens also have a fair amount of Vitamin E, which aids cognition. So if you are suffering from “mommy brain” or getting older, stock up on those greens (Source)!
I have found that as I get older I get a craving for the greens I hated as a little kid. If you want some delicious ways to prepare greens, head over to Book of Yum or Gluten Free Cooking School. They are the Queens of Greens.

THE MENU SWAP
Menu Swap is at Gluten Free Cooking School this week! Email Mary Frances if you have a menu up!
Also, if you would like to host a menu swap [or host another menu swap] email me with an ingredient and I will put you on the list. If there is a particular time you can’t host, let me know! I know a lot of us will be in and out of town in the next two months!

I love the menu plans. I never realized how reading others would help me plan mine.
You reminded me that I haven’t had pesto in a long time! For some reason I am dreaming of pesto smeared on bread and baked..yum. I haven’t had pesto in over a year!! Crazy.
Cute pic, of course. He is such a cutie! Brag away, I like seeing the photos.
Nice menu plan, I am so glad you guys like the tenders. By the way, I am making those marmalade muffins soon, I have been wanting those..hmm, maybe tomorrow morning. Navy Boy is off…coffee date in the works with those.
SM- Thanks! I have been really in to making my own pesto lately. It has a lot less garlic and additives. It is so good on gluten free pasta or even grilled cheese sandwiches!
I LOVE those muffins because they are not too sweet. I made the icing for Jude but he liked my plain ones fine too. I would just go for the plain with a little butter like you said.
[...] And last but not least, Natalie at Gluten free Mommy has posted some great information on why greens are an especially good food for celiacs. It sounds like Sea and I might have even convinced her that they taste good since she’s having Pesto Penne with Kale, Bacon and Mushrooms on Friday night. Click here for the rest of simple, yet really yummy menu. [...]
Ok, I have been resisting the menu planning and have been too busy to properly blog lately, but I must. So I shall attempt it. Do I need to post the menu before I start cooking it or can I post it mid week? Does taking a day off of work to blog sound silly?
I too am running through my Tday menus and doing some trials. The BF’s parents are coming - panic!! Practice makes perfect.
Ginger-
It is up to you when you post the menu! Most of us post it before we start cooking it. Karen at Gluten Free Sox is posting next week so email her your post link when you get it up. So glad you are going to participate! Yay!
