I have gotten several requests from my readers for menu ideas. You just can’t be gluten-free and happy without a menu plan. Sea over at Book of Yum participates in Menu Plan Monday along with many other bloggers, so this week I decided to join them.
My dinner menu of the week:
Monday: Chicken Paprika over Rice
Tuesday: Baked Eggplant Zucchini Spaghetti
Wednesday: Chicken, Potato, and Butter Lettuce Salad w/ Casserole Bread
Thursday: Tinkyada pasta with Italian Sausage
Friday: Spinach Fandango
Saturday: leftovers
Baking: Banana bread, Bette Hagman’s Swedish Apple Torte, and something chocolate.
The days are a guideline- subject to change at the tyrannical whim of this gluten free mommy. I am trying some new recipes and new creations this week, so we will see which ones are blogworthy.
This picture is of my oldest child, Jude, in his bathing suit. I don’t have a picture of him yet on the blog, so this one will have to do for now. I could not get him to turn around for the picture! Since he is only 18 months old, I figure it is still okay to make him wear a swimsuit that looks like a “Ninja Turtle” costume

Cutie!! My son still wears one like that when we are at a busy pool, and he’s 4.
SM- Your menus really helped me! I will be looking for them. I think those swimsuits look funny, but they give Jude so much more confidence in the water.

But I do try to plan at least a day at a time, or sometimes a few days at a time.
