I made these cupcakes last night after trying about 4-5 different chocolate cupcake recipes prior. This is absolutely the best one and definitely an equivalent for the wheat-flour based one. I am newly gluten free so I definitely still remember the taste of wheat flour. This recipe comes the closest and maybe even surpassing the wheat based recipe in terms of flavor and texture. I subbed potato starch for the tapioca as I think I'm sensitive to tapioca. I also turned my oven to 375* instead of 350* and baked them about 6-7 minutes longer than indicated. Thank you SO much Natalie. Any recipe I've made of yours (about 3-4 now) have turned out wonderful.

My daughter has been off wheat/gluten for three years (she has juvenile rheumatoid arthritis and we think wheat/gluten is a trigger). She turns 6 this month and I've been searching for a cupcake recipe to serve at her birthday party. I just baked these cupcakes (to take as my daughter's special treat to a friend's birthday) and they are DELICIOUS!!!!
I substituted 1 cup of agave nectar for the sugar and used Energy egg replacer instead of eggs and they still turned out light and moist and tasty - perfect to serve to anyone, including a bunch of kindergarteners!
THANKS SO MUCH!!!

Jean-
A lot of my meals are simple ones for that reason! We are all busy moms, so I try and post some easier recipes too even if they are obvious and not gourmet. I hope to hear from you again soon. Good luck!

Hi,
I just put my 12mo daughter on a gluten free diet (I suspect she might have celiacs). It has really helped her focus and her affect is much improved. I was always a skeptic of diets and holistic/alternative treatments but the change is remarkable. Unfortunately I'm not much of a cook, GF diets take a lot more work and my daughter can't live off of frozen Amy's meals and scrambled eggs forever. It is midnight in NYC and I have just put the Pantry Beef casserole dish into the oven. It looks great and was pretty simple. I'll be referencing this site quite a bit in the future. Happy I stumbled across it.

All my best wishes for a safe delivery and a healthy baby.

I loved having energy when I was pregnant with my son, although it just seemed to disappear by the 6th month with my daughter. Although I was attempting to keep up with a very energetic 3 year old at the time.

Good luck!

Hey wavybrains- the site is far from where I want it. Hopefully, in a couple months I will be able to really concentrate on it!
