She turns 6 this month and I've been searching for a cupcake recipe to serve at her birthday party. I just baked these cupcakes (to take as my daughter's special treat to a friend's birthday) and they are DELICIOUS!!!! I substituted 1 cup of agave nectar for the sugar and used Energy egg replacer instead of eggs and they still turned out light and moist and tasty - perfect to serve to anyone, including a bunch of kindergarteners! It has really helped her focus and her affect is much improved. I was always a skeptic of diets and holistic/alternative treatments but the change is remarkable. Unfortunately I'm not much of a cook, GF diets take a lot more work and my daughter can't live off of frozen Amy's meals and scrambled eggs forever. It is midnight in NYC and I have just put the Pantry Beef casserole dish into the oven. It looks great and was pretty simple. I'll be referencing this site quite a bit in the future.
