LOVE this recipe.
Thank you for all of your amazing gluten-free ideas!
I found out about my deadly nut allergy after anaphylaxis at the age of 10, and discovered my gluten intolerance another ten years later. Because of blogs and books like this, eating things like cake has not only been do-able, but completely enjoyable!
I started my own blog and wrote my own cook book.
I have been on a cake binge, myself. :)

Hi gf cake lovers. One reason your cakes/cups might have fallen is it may not have been cooked long enough. However, one benefit of a slightly under-done cake is it's moisture. Yummy
Try leaving it in the oven until your skewer or knife is dry and clean. Or, just slice off the top that has fallen to level, divide in two, frost and enjoy.

I just made a vegan version of this. It turned out lovely. It set perfectly, in fact it was very dense. The strawberry shined through beautifully and I feel justified in eating it for breakfast or dinner. Thank you!

this cake was sinful! i made cupcakes... 30 of them from this recipe. i have plenty to freeze for later... and we ate way too many already.

i made a mess in my kitchen baking today... it was FUN!

a suggestion for anyone using this recipe for cupcakes... maybe start out by making half the recipe for the icing. i had tons left over.

thanks for such a wonderful recipe. i will keep it and use it often... or until i run out of that $11 bag of almond meal. ouch! but it was well worth it.

WOW This looks amazing!

I am still new to GF living & am starting easy but would LOVE to try this.
Is there a simpler recipe/Sub If I were to replace the flours with Bobs Red Mill all purpose GF baking flour?
Thank you so much!

*My kids miss cake, because of my Gluten allergy*

Before gluten fand dairy free, I had an almost exact replica of thiscake recipe using regular flour. I was hoping this would be as awesome as the one I used to make. Boy, was I thrilled! I made it this weekend for my daugher in law's birthday and it was fabulous! I was worried about the "falling comments" but I had no problem. Even though the batter looked OK with less milk, I used it all . That may have been the problem of falling for those that used less. I used coconut milk and vegan butter. And, I made a chocolate ganache and fresh strawberries to decorate instead of the frosting. Chocalte and strawberries...Yumalicious!
