Love quinoa!! I just discovered it a couple of weeks ago. I made quinoa and kale the first night I bought it. I used Edward and sons gluten free and vegan 'not chicken' chicken boullion, some herb and onion Mrs. dash and some olive oil and tossed in a couple handfulls of chopped kale. It cooked up beautifully and tasted fantastic. The next day I made chicken fajitas and with the leftover quinoa and leftover chicken, onion and bell pepper mix I had quite a feast. It was yummy. I don't miss couscous at all.

Hi,

Just found your blog.
This is the only grain I haven't played with & I really need to - my son keeps complaining he's hungry no matter how much he eats so maybe this would do the trick given the nutrition it contains. & I suspect we at least have wheat sensitivities - we don't eat a lot of wheat/gluten on a regular basis so it's hard to tell.

Do I just quinoa use it like I would rice?

Or poaching the chicken would work! Basically you would boil the chicken until it was no longer pink and you could add herbs for flavor if you wanted to!

cz- those are mushrooms I swear! lol If I were to add chicken to this recipe I would use leftover shredded roasted chicken. You could also heat some oil on med. high heat and cook the chicken that way.

completely clueless
when it comes to cooking chicken.

i think its because there
are SO MANY WAYS!!!

SM- You are right about that! You will have to ban couscous to your non-gf kitchen. =)

Childlife- Thank you for the compliment. I ventured over to your site too. I am definitely going to try that graham cracker recipe.

Katherine-I have not been able to source quinoa flakes locally. I am going to ask Whole Foods to start carrying it, but until then I am stuck ordering it online!

Quinoa really is great stuff. We also use it instead of couscous and the quinoa flake is a nice sub for oats in baked items. I'll have to try your recipe, sounds zippy!
