		<description>The exact recipe I needed this morning.   Had everything on hand, including the spice (no cinnamon in the house).  I did, however, add 1/4 tsp. xanthan.  Recipe resulted in gummy pancakes (my 3-year old says that they are chewy).  Any suggestions for saving the rest of the batter?  Should I not have added the xanthan gum?</description>

		<description>Okay, I must have done something really wrong the first time. I tried again today with fresh baking powder and used a bit more milk than it called for and they were fabulous!!! We all (husband and 2 year old) LOVED them! Thank you for the recipe.</description>

		<description>Nicole, if the batter is too dense the batter will have a harder time cooking through - so by making the batter thinner you would solve that problem.  I used a 1/4 cup measuring cup, so I would say no to the heaping spoon thing... :)  Change the baking powder and try again.  These really are great pancakes!</description>

		<description>[...] This gluten free pancake mix was fairly easy to mix by hand and it spread fairly easy on my griddle. I did have to add quite a few ingredients- egg, oil, honey, soymilk, and sea salt.  I was thrilled to see that they seemed to cook well with no telltale gluten free mush in the middle. The one thing I can&#8217;t stand is mushy, mealy gluten free pancakes. Eww. I was right, there was no mealy, mushy center. However, it was almost too cooked, despite the fact they were not overdone. My pancakes were dense, dry, and required a healthy amount of butter and maple syrup to make them taste better. The flavor of these gluten free pancakes reminded me of a nutty, whole grain, &#8220;healthy&#8217; version of my favorite breakfast food. The wild rice base does have a nice flavor, but the dry, dense texture and consistency overshadow the flavor. PROS: easy to prepare, wholesome flavor, 6 grams of protein  CONS: dry, dense, not your standard fluffy pancake Rating: 2 stars Want to try these for yourself?
