Hi Natalie,
I'm pretty new at this gluten free stuff but am very anxious to try this recipe. Breakfast has been my hardest time to go gluten and evap cane sugar free. Thank-you much, this sounds fabulous.

Michelle- I did roasted sunflower seeds, sweetened coconut, and I might eyeball the ground flax seed -maybe use a little less? It should be easy to tell once you have it mixed up. Great variation ideas!!!

This sounds great, Natalie! Do you think it would work to use 1/4 cup ground flax seeds, instead of whole flax seeds? I've heard that the pointy ends can be troublesome to sensitive GI tracts. NB: ground flax seeds should be kept in the freezer.

Also, are you referring to salted/unsalted/roasted/raw sunflower seeds? And do you recommend sweetened or unsweetened shredded coconut?

I bet this recipe would be good with almond butter instead of peanut butter and maybe some extra almond extract. I just received a bottle of almond extract, so I am on the lookout for recipes to use it in. :)

Kate- The commercial cereals are really lacking- and they normally consist of a lot of corn.

SM- It is easy and fun. Anything goes! I love recipes like that!

Carrie- I have made that mistake before too! I am really enjoying eating oatmeal and granola again.

Roch- Thanks for commenting! I have not tried that brand. I will look into it. I am always looking for great products, thanks! :)

Have you tried Bakery on Main gluten free granola? It's really good -- and you can buy it on Amazon. I love it mixed with plain yogurt.

Natalie -
This looks AWESOME. Funny, I love granola, good granola, but hadn't thought of making my own.

I have never been big on cereal in the first place myself. But occasionally something in cold milk is very very good.

Yummy recipe.

Glad you are back!

Oh ! Yum, Natalie!
That looks great.
I think we share flavor-buds, huh? I have used dried cherries instead of chocolate chips. I'll have to try the chocolate (MMMMM!!!) for breakfast one day soon!

And yes - I agree GF commercial cereals are seriously lacking!

Thank goodness for yours! This looks GREAT!
=)
