The ingredient of the week is butternut squash, which I had never tried before having kids. It really is wonderful for those who haven’t tried it. Butternut Squash makes great baby food! I will be making a puree for Big Dan (7 months) this week for him to try for the first time. I really don’t have anything challenging as far as dinner goes for the week ahead. Monday: Stir Fry Noodles
Tuesday: Sweet and Sour Meatloaf (every time I ask my husband what he wants for dinner this is what he wants)
Wednesday: Karina’s Sweet Potato and Black Bean Enchiladas
Thursday: Baked Potato soup with Millet Oatmeal Bread ( carry over from last week)
Friday: Mahi Mahi Tacos

Michael would LOVE that meatloaf! I really need to plan to make that sometime! Of course he would LOVE Jude’s hotwheels too! LOL
Mmmm looks delicious! I keep coming across sweet potato enchiladas- one of these days I’ll have to break down and make the darned things. haha. Baked potato soup sounds good too, especially after coming home to cool, cloudy Mountain View after a sunny Florida vacation. *sniff*

Just because everyone else said it…the meatloaf sounds great. Seriously, I’m going to have to make it. My dh will love it. I guess it’s a guy thing? lol.
