		<description>Wonderful post. Just lovely! I believe undiagnosed celiac disease contributed to my dad&#039;s death a few years ago. That&#039;s why I am on this journey to increase awareness and share information. He was an Olympic athlete and an arctic survival specialist for the Air Force. He was in his 80s when he died, but a strong character all the way to the end. And my brother-in-law, whom I never met, died in Vietnam. We are all support for each other. Don&#039;t you just love this little sub-culture of GF friends we&#039;ve created?! Thanks for sharing your story. Sending good energy your way.

I work for a television station and a few years ago covered a story about a local man whose remains were recently found in Vietnam.  The emotions and relief that his family felt were so, very touching.  For over 25 years he was MIA.  I&#039;m sure you&#039;re well aware, but your Dad was doing such important work.  

I just also wanted to add that my boyfriend is currently deployed in Iraq, but coming home in two weeks (knock on wood that his stay doesn&#039;t get extended) so you&#039;ve got another military-lass in the gluten-free blogging world. : )

		<description>I stumbled upon your blog today and am so greatful for the insite you share and for the amazing recipes.  I have just (in the last 3 weeks) been diagnosed with Coeliacs and have found myself incredably frustrated.  

Growing up I always had what my mother called a tender tummy but now at the age of 39 we know just how tender it really is.  

I love to cook and bake so the experimenting with different recipes isnt that much of a strain.  Involving my 5 year old daughter in the cooking also gives us quality time together and we get to taste yummy things at the end.  Having a husband that is totally supportive also maks a huge difference : )

Must be off ,and thanks once again, we are having Chicken broccoli cheese casserole for dinner tonigh and I cant wait.

I completely agree with you about the nutritionless starches. I feel like we&#039;re getting to a new stage in gluten-free food and--hopefully--companies and bakers will get on board with baked goods that not only taste good but are good for us. I&#039;m trying to use no more than 1/4 c. starch per cup of whole grain flour--sometimes it works and sometimes it doesn&#039;t. I&#039;ve definitely played around with doing some GF baking on the side but am daunted by the risk and responsibility of claiming something is gluten free. Good luck!</description>
