Cindy- Let me know if you get the coconut cream to work in this recipe.  I have heard of people making a condensed coconut &quot;milk&quot; before, so maybe it would work.

Slacker Mom-  I added the link.  Thanks!  I need to try an amaretto version of the fudge recipe.  Great idea.

Karen- Great job on the new site.  I think you will enjoy wordpress.

Sally - Truffles are wonderful anytime.  I think you could create a coconut cream recipe.

		<description>I made some truffles for Christmas with cream cheese, GF oreo type cookies (very easy to find) and some almond bark.  You just crumble the cookies and mix with cream cheese and roll into balls.  (You may have to refridgerate for a half hour or so)  Then melt your almond bark and dip and enjoy.  You can use white or milk and reverse for splashing over the top.
I hope you might give them a try.  Every one loved them where I took them and would never know they were GF.</description>

You should also link to your easy fudge recipe, for those who want the easy way for chocolate...I might make it for my hubby (who is working all day into night) to put in his lunch and supper, but use Amaretto  instead of the peppermint, and sprinkle almonds in top.
