These are so delicious. I used this and added flax and brewers yeast (omitted toffee since I didn't have any) to make lactation cookies! Wow- great results and yummy, yummy cookies!

Betty- Thanks for commenting! This decision is very difficult! For me, the decision was easy because Jude's food kept getting everywhere (he is a toddler). It was a cross-contamination disaster. And besides, he might turn out to have a gluten intolerance. So the rest of my family is mostly gluten-free to protect me. They don't mind. It is expensive to keep everyone gluten free, so some people don't do it. There are so many issues with this decision. Good luck! :)

Catherine- Thanks! :)

Tickldr- This one is probably not a good one to convert, but I will be working on some cookie recipes. I am not eating sugar anymore and am focusing on the glycemic index, so we are using agave also. Hopefully I will come up with something you will like.

Dianne- I would love to see your jazzed up version! Please post it! :)

I love recipes like this, but I too can't eat sugar - however, agave nectar makes a great replacement and does not affect the insulin levels, and it is low on the glycemic index!!! Now the question is how do you use it and still get the wonderful crunch in cookies? Any great GF recipes for Biscotti? I have found that I like to use 1/2 almond meal in my recipes so I get a bit more protein, less refined carbs (finely ground flours) and some fiber.

These look wonderful! So why are you not eating sugar? I'm waiting for my endoscopy though so far my bloodwork is positive. I thought for sure that at least two of my 4 children have celiac, but only one does, the other we're waiting on the genetic test to come back. These two just had an endoscopy today. It went well, thank God.

I was really preparing myself for making our home GF, but if it's just two out of 6 of us who are celiac, then maybe that's not wise. This is a whole new thought for me and I'm not sure how we will handle this. Any suggestions?

I come here almost daily. This blog is such an encouragement to me and a source of info. Thanks so much!
