		<description>I just want to share that I am casein intolerant also, but I use a soft goat cheese to replace the cream cheese.  I find that Costco has a fantastically mild soft goat cheese &quot;Pampered Goat&quot; - I am in California, so I dont&#039; know what Costco sells in the rest of the country.  Pamela&#039;s and Trader Joes also make gluten free wonderful ginger snaps.

Given the amount of apples I have in my basement from the farm, an apple crisp with a new cream cheese layer is in the plans for later in the week - great idea, thanks!  If you need some Gingersnaps, and who doesn&#039;t?, look for Pamela&#039;s GF Gingersnaps in a green ziplock type bag.  They are terrific - I don&#039;t care for MDels (maybe mine were stale), but Pamela&#039;s are crispy, chewy, tender and full of ginger.</description>

Kate- Thanks for the inspiration.  I really thought it tasted great with this- not too sweet.  You just have to watch the ice cream you pair with it.  You probably would even without the cream cheese though.  I can&#039;t find a commercial vanilla ice cream I like at anytime. It is frustrating.  So I bought one of those ice cream machines to try making my own.  It really is worth it.
